Servings: 8 servings

Ingredients

  • 1 1/4 pounds ground chuck
  • 1 15-ounce can tomato sauce
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 8 ounces egg noodles
  • 1/2 cup sour cream
  • 1 1/4 cups small-curd cottage cheese
  • Pinch of red pepper flakes
  • 1/2 cup sliced green onions or less to taste
  • 1 cup grated sharp cheddar cheese
  • Crusty French bread for serving

Method

  1. Preheat the oven to 350°F.
  2. Brown the ground chuck in a large skillet and drain the excess fat. Add the tomato sauce, salt, and plenty of freshly ground black pepper. Stir and allow the mixture to simmer while you prepare the remaining ingredients.
  3. Cook the egg noodles until al dente. Drain and set aside.
  4. In a medium bowl, combine the sour cream and cottage cheese. Season with freshly ground black pepper and a pinch of red pepper flakes. Add the mixture to the cooked noodles and stir to combine. Stir in the green onions.
  5. Add half of the noodle mixture to a baking dish. Top with half of the meat mixture and half of the grated cheddar. Repeat with the remaining noodles, meat mixture, and cheddar.
  6. Bake for about 20 minutes, or until the cheese is melted.
  7. Serve warm with crusty French bread, if desired.
  8. To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

Notes

Freezer instructions

Assemble the casserole in a disposable aluminum oven-safe pan. Cover tightly with the lid or heavy-duty foil, sealing the edges well to help prevent freezer burn, and freeze.
