Lemon Bars

A perfect summer dessert that's light and very refreshing.

Ingredients
  

  • 1 package lemon cake mix
  • 4 large eggs
  • 1 22 ounce can lemon pie filling
Frosting
  • 3 ounce cream cheese
  • 1/2 cup butter
  • 2 cups confectioners' sugar
  • 1-1 1/2 tsp vanilla extract
  • 2 tbsp milk

Method
 

  1. In a large bowl, beat the cake mix and eggs until well blended. Then fold in the pie filling.
  2. Spread into a 15x10x1 in. baking pan (we used a 13x9, and it worked fine).
  3. Bake at 350 for 20 min (we had to add 10 min. to that).
  4. Once cooled, spread the frosting.

Notes

Frosting will not be very sweet. If you prefer something sweeter, use a can of store-bought lemon frosting.
