Garlic Butter Air Fryer Chicken Bites with Broccoli

I'm telling you, the air fryer is our busy household's best friend. When we don't have time to cook a stove-top or oven-made meal, this is the way to go. And these Garlic Butter Air Fryer Chicken Bites with Broccoli were certainly a hit.

Ingredients
  

For the Chicken
  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
Garlic Butter Sauce
  • 3 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp parsley, chopped
For the Broccoli
  • 3 cups broccoli florets
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Preheat the air fryer to 400 degrees.
  2. In a large bowl, toss the chicken pieces with olive oil, garlic powder, paprika, salt, and pepper.
  3. In another bowl, toss broccoli florets with olive oil, salt, and pepper.
  4. Loosely line the air fryer basket with foil if desired for easier cleanup.
  5. Add chicken and broccoli to the basket in a single layer.
  6. Air fry for 9–10 minutes, shaking halfway through, until the chicken is cooked through and slightly crispy on the edges.
  7. While everything cooks, stir together melted butter, garlic, and parsley.
  8. Toss the cooked chicken in the garlic butter sauce before serving.
  9. Serve immediately on its own, over rice, or with potatoes.

Notes

Don’t overcrowd the basket for the best crispiness.
Chicken thighs also work really well in this recipe.
Add red pepper flakes if you want a little heat.
Leftovers reheat beautifully in the air fryer for 2–3 minutes.
