Cheeseburger Cups

This recipe is a hit with my boys. It's perfect for after games or after practices, when they're just starving. And leftovers are just as good!

Servings: 4 servings

Ingredients
  

  • 1 lb ground beef
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp prepared mustard
  • 1 1/2 tsp Worcestershire sauce
  • 1 tube (12 ounces) refrigerated buttermilk biscuits
  • shredded cheese

Method
 

  1. In a large skillet, cook the beef over medium heat until no longer pink. Drain. Return to pan.
  2. Stir in the ketchup, brown sugar, mustard, and Worcestershire sauce. Remove from heat and set aside.
  3. Remove the biscuits from the package and divide each in half. Press each biscuit onto the bottom and up the sides of a greased muffin cup.
  4. Spoon the beef mixture into cups and top with shredded cheese.
  5. Bake at 400 degrees for 14-16 minutes or until golden brown.

Notes

Additional Toppings

These cheeseburger cups are perfect as is. But to make them even better, top them with diced pickles, tomatoes, avocado, and onions. You can even add some crushed cooked bacon.

Freezing

Freeze the cooled cheeseburger cups in a freezer container, separating the layers with waxed paper. To use, thaw in the refrigerator for 8 hours. Then reheat on a baking sheet in a preheated 375-degree oven until heated through.
