I absolutely love the rice bowls from Qdoba. I could probably eat them every day. And with a Mexican Coke, it’s the perfect meal.
But eating out is obviously costly. So I’ve decided to make a Taco Rice Bowl at home.
What’s cool about this meal is that you can totally make it your own. Change up the rice, add salsa, mix in some southwest-style corn. The options are endless. But here’s my take on it!

Taco Rice Bowl
Use leftover taco meat and cooked rice for an easy and yummy taco rice bowl.
Ingredients
Method
- Cook the white rice according to package directions.
- In a separate pan, cook ground beef until done. Season with taco seasoning as it cooks. Drain.
- Heat pinto and black beans.
- Create your bowl! Add rice, beans, taco meat, lettuce, tomatoes, olives, avocadoes, onions, and sour cream. Garnish with chips for dipping.
- Dig in!

You can use so many options to make this a different meal each time. Rice – choose from white, brown, Spanish, Mexican, or mix them! Protein – chicken, beef, steak, ground turkey. The options here are endless. Additional toppings – salsa, queso, fajita vegetables, cotija cheeseThis really is a great and easy option for a quick mid-week meal or a grab-and-go for work or school. Everything heats easily, and you can mix and match depending on what you feel like.
