Food Edition: Chicken Kebabs

We were trying to vary our routine. Chicken is common on our menus. So why not do something a little different? I got some chicken breasts and a variety of vegetables, and even some pineapple!

I didn’t have a teriyaki marinade, so I made something similar using a few ingredients I had at home. Let’s just say, it turned out amazing!

Grilled Chicken Kebabs

It's grilling season! And everyone knows it's time for kabobs. Take chicken, some fruit, and some veggies, and make the perfect summer meal.

Ingredients
  

  • 1/4 cup soy sauce
  • 2 tsp minced garlic
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 4 bonelss, skinless chicken breats, cut into 1 1/2-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chuncks
  • 1 orange bell pepper, cut into chunks
  • 2 cups fresh pineapple, cut into cubes

Method
 

  1. Once the chicken is ready, threaded the chicken, peppers, onion, and pineapple onto skewers, alternating the ingredients howevyou like.
  2. Grill the kabobs over medium-high heat (about 400°F) for 12–15 minutes, turning them every 3–4 minutes so they cooked evenly.

Notes

They turned out so good! Even better, the leftovers went into a container for Mike to take to work the next day. It was a simple way to change up our usual chicken dinner while adding a little more color and flavor to the plate.
