I absolutely love the rice bowls from Qdoba. I could probably eat them every day. And with a Mexican Coke, it’s the perfect meal.

But eating out is obviously costly. So I’ve decided to make a Taco Rice Bowl at home.

What’s cool about this meal is that you can totally make it your own. Change up the rice, add salsa, mix in some southwest-style corn. The options are endless. But here’s my take on it!

Ingredients

Cooked, white rice

Ground beef

Taco seasoning

Pinto beans

Black beans

Chopped romaine lettuce

Diced tomatoes

Sliced olives

Diced onions

Sour Cream

Guacamole or diced avocados

Shredded cheese

Sour cream

Tortilla chips

Directions

  1. Cook the white rice according to package directions.
  2. In a separate pan, cook ground beef until done. Season with taco seasoning as it cooks. Drain.
  3. Heat pinto and black beans.
  4. Create your bowl! Add rice, beans, taco meat, lettuce, tomatoes, olives, avocadoes, onions, and sour cream. Garnish with chips for dipping.
  5. Dig in!

This really is a great and easy option for a quick mid-week meal or a grab and go for work or school. Everything heats easily and you can mix and match depending on what you feel like.

Options

You can use so many options to make this a different meal each time.

Rice – choose from white, brown, Spanish, Mexican, or mix them!

Protein – chicken, beef, steak, ground turkey. The options here are endless.

Additional toppings – salsa, queso, fajita vegetables, cotija cheese
