I found a recipe for this online, and let’s say this has become one of our favorites. So much so that I had to double the recipe. We’ve also tried different variations. That’s what I love about it. You can do chicken if that’s what you prefer. Or ground beef or turkey. You can use a red enchilada sauce or even a sour cream sauce. (The sour cream sauce is so good!)

I’ll start with the basic recipe. Then I’ll give you some ideas for other ways to create this magical meal!

Also, this is a meal by itself. It doesn’t need any side dishes. But you could always make some retired or black beans, chips, salsa, or even some Mexican rice.

Ingredients:

I make a double batch because there are 5 of us, and I just left this for leftovers. It’s perfect to heat up the next day for a quick lunch.

For a double batch, you’ll need:

  • Old El Paso Red Enchilada Sauce – 2 28-ounce cans
  • Canned sliced black olives – 2 3.8 ounce cans
  • Boneless skinless chicken breast – 2 pounds
  • Southwest corn – 2 15-ounce cans
  • Green chiles – 1 7-ounce can
  • 30 corn tortillas
  • 4 cups of cheese – I use the Colby-Monterey mix, but cheddar works great, too

Recipe:

In a large crockpot, place the chicken and both cans of enchilada sauce.

Cover and turn the temperature to low. Cook for 7 hours.

Next, cut strips of tortillas and add them to the chicken and sauce. Add 1 can of sliced black olives, both cans of Southwest corn, the chiles, and 2 cups of cheese. Stir the mixture.

Pat the mixture down and add the rest of the cheese and the other cans of olives. Do not stir. Let this mixture cook for another hour.

Once finished, you end up with a cheesy, warm, delicious meal.

Spoon some into a bowl and add a dollop of sour cream. You can even add some tortilla chips for a little bit of crunch.

Variations

Ground beef or turkey – Use cooked and drained ground beef or turkey and cut the cooking time in half.

Use a sour cream sauce instead of enchilada sauce – I have used the same ingredients, but instead of enchilada sauce, made it with a sour cream sauce. You can find recipes all over the internet. This turned out to be a really yummy experiment!

Cooked chicken – When using cooked chicken, cut cooking time in half. This is a great way to extend a roasted chicken or any kind of leftover chicken you have.
