We were trying to vary our routine. Chicken is common on our menus. So why not do something a little different? I got some chicken breasts and a variety of vegetables, and even some pineapple!
I didn’t have a teriyaki marinade, so I made something similar with soy sauce, minced garlic, garlic powder, and pepper. I cubed the chicken and added it to the marinade. I let that sit for about an hour or so.
While waiting on the marinade, I chopped the onions, red, green, and orange bell peppers, and pineapple into similar-sized cubes. Because the kids and I don’t really like vegetables, we had some with just chicken. And we also has some with just veggies.
Once the chicken was ready, we made the kebobs!

Mike grilled them until the chicken was done but still juicy and the vegetables had a nice char. They were so good! And whatever was leftover, we placed in a container that Mike took to work the next day. It was a perfect way to eat chicken with a little variety!
