So, my mom has a blackberry bush in her yard and uses the plethora of blackberries to create jam. Oh, it is so, so good! You can use it on biscuits, toast, pancakes, and waffles. The possibilities are endless!
Ingredients
1 pound of blackberries
1 1/4 cups sugar
Directions
In a non-reactive pan, mash the blackberries with a potato masher. Add the sugar and heat the contents over medium heat, stirring gently, until the sugar is dissolved. Raise the heat to medium-high and boil the mixture for about 10 minutes. You want to do it long enough that a drop mounds in a chilled dish.
Pour the jam into a jar and cap the jar tightly. Store in refrigerator. This jam should keep for several weeks.

And the biscuits are homemade, too, from my mother-in-law, Laura Ulmer. She uses Pioneer Baking Mix. Her secret? Buttermilk! Always use buttermilk in the recipe.
