This is a delicious dessert perfect for summer. It’s light and refreshing but very sweet. A shout out to my parents for this yummy recipe!

Ingredients:

1 package lemon cake mix

4 lg. eggs

1 can lemon pie filling (we used 22 ozs)

In a lg. bowl, beat the cake mix and eggs until well blended, then fold in pie filling. Spread into 15x10x1 in. baking pan (we used a 13×9 and it worked fine). Bake at 350 for 20 min (we had to add 10 min. to that).

Frosting:

3 ozs of cream cheese

1/2 cup of butter

2 cups of confectioner’s sugar

1-1/2 teaspoons vanilla extract

2 tbls. of milk

Tip:

Frosting will not be very sweet. If you prefer something sweeter, use a can of store-bought lemon frosting.
