Food Edition: Bonbon Coco

This recipe all started with a class project. Braden had a presentation on Madagascar. His job was to put together slides on all sorts of things related to this country, such as the type of government, the capital, exports and imports, and who the leader is. He was also told to bring something to class that represented this country. Well, when doing research, we found that Bonbon Coco, a coconut candy, is a popular food item there. The following recipe is what we used to create this dessert.

Ingredients

2 1/2 cups coconut, grated

1 cup sugar

1 1/2 cups water

1/2 cup sweetened condensed milk

Pinch of salt

Directions

Combine the coconut, sugar, and salt in a heavy cooking pot.

Add the water and sweetened condensed milk.

Slowly bring the mixture to a simmer over medium heat, stirring occasionally.

Continue to cook for about 20 minutes or until the coconut mixture is thick and all liquid has evaporated. The coconut will begin to brown, and the mixture will be stiff and sticky.

Remove from heat.

Form the coconut mixture into balls. Place balls on a sheet of wax paper.

Set aside to cook completely. The balls should be firm but not crunchy.
